Lead Baker - Bart’s Bagels (Full-time)

Seeking a motivated, ambitious, experienced lead baker with a positive attitude and strong leadership skills to help lead our baking team at our new shop in South Philly.

Bart’s Bagels is a hybrid - bagel bake house, smoked fish joint and neighborhood coffee shop that elevates the ordinary and raises the bar for Jewish comfort food in Philadelphia.

Bart’s Bagels is unique because it honors traditional bagel-baking methods by producing handmade, kettle-boiled bagels that are slowly fermented and have a beautiful dark and crackly crust and are perfectly chewy with seeds on both sides.

The Lead Baker is responsible for overseeing the entire bagel process - including bagel baking and dough production. In addition to producing a high-quality product in a fast and efficient manner, the Lead Baker is responsible for inventory, ordering and following procedures and recipes. Bagels are baked continuously throughout the day, ensuring the freshest bagels for our customers.

You will learn techniques that bagel bakers have been using for over a hundred years, preparing the dough, which includes mixing, dividing, shaping, and proofing all bagel products, as well as boiling and baking the product.

- Team player and is willing to learn as well as educate team members and customers about bagels and what makes ours so special

- Know the correct mixing order. Must be accurate in mixing, dividing, shaping, and proofing to ensure consistency and quality in daily production.

- Mix doughs correctly and weigh/measure accurately using scales.

- Understand and follow all recipes and instructions.

- Follow the production schedule and maintain efficient timelines.

- Follow and comply with established procedures, including health and sanitation and adhere to safe work practices

- Daily cleaning includes: wiping down bake area, cleaning kettle, sweeping oven shelves, sweeping and mopping the bagel area, cleaning bagel boards and racks, cleaning and organizing the walk in cooler, restocking seeds

Restock and set up the next shift; refrigerator product must be rotated for “first in, first out;" communicate to management dough counts and any products that need to be ordered at the end of each shift

- Ability to be on your feet for a long period of time

- Comfortable working with very hot ovens and boiling kettles

- Able to lift 50 lbs
