Exciting Opportunity for an Experienced Sous Chef Ready to Advance Their Career

Join us at a cozy 26-seat New wine bar located in the heart of Portland's Old Port district. We prioritize simplicity and creativity, utilizing the freshest ingredients sourced daily. In our challenging small kitchen with limited refrigeration, we embrace ultra-fresh ingredients and focus on reducing waste.

Responsibilities:

Design and prepare a concise menu of 8 innovative small plates that highlight New England’s seasonal offerings.

Build and maintain relationships with local farmers, craft producers, and fishermen to ensure the highest quality of ingredients.

Utilize skills in fermentation and other preservation techniques to enhance our menu.

Qualifications:

Proven culinary experience and a passion for farm-to-table cooking.

Minimum of 2 years in a successful establishment with a similar concept.

Experience in Michelin-starred restaurants, The World’s 50 Best Restaurants, Relais & Chteaux, or Forbes-rated establishments is highly desirable.

A strong understanding of innovative dining concepts such as Septime in Paris, Bar Brutal in Barcelona, and Four Horsemen in NY is a significant plus.

Ability to thrive in a small kitchen environment, emphasizing teamwork and creativity.

Enthusiasm for forming connections with local artisans and suppliers.

Must provide 3 professional references.
