Participate in and lead staff in preparing pizza and related menu items in one of three Pagliacci franchises located on the UW main campus.DUTIES AND RESPONSIBILITIES

As a working lead, assign, instruct and check the work of staff.

Ensure that all menu items produced comply with service, recipe and product specifications including:

Dough management

Pizza topping, tossing, launching, slicing, and line set-up

Salad and dressing preparation

Customer service

Perform quality control assessments, including Slice Quality Rating (SQR), Pie Quality Rating (PQR) and Quality Service Cleanliness (QSC), as well as product audits

Develop prep and order lists in consultation with the manager for the tasks of the day

Organize work to meet daily labor and production goals. Inform manager when goals are not being met

Set up station by stocking according to established plans and par levels; check par levels throughout the shift and ensure that station maintains stock

Monitor prepared foods for compliance with Washington State health code regulations, including taking and recording food temperatures before the food leaves the production area

Maintain records of foods produced, foods wasted and any recipe adjustments. Report discrepancies to manager

Instruct and participate in cleaning the interior and exterior of the work unit using sanitizing solutions as needed and in compliance with Washington State health code regulations

Interact with and receive orders from customers, providing prompt and friendly service

Receive cash payments and debit cards from customers; account for receipts at the end of the work shift; perform cash handling duties as assigned

Monitor catering and pickup orders

Ensure that staff take breaks by arranging for coverage that does not adversely affect customer service

Foster a positive work environment

Report safety issues to management

Perform related duties as requested

Provide direction to kitchen staff for following recipes and standard production methods identified in these worksheets.

Take inventory counts using tally sheets from CBORD FSS system. POSITION DIMENSIONS Schedules may be changed with two weeks’ notice. The majority of employees are in nine-month cyclic positions that will work full-time, mid-September to mid-June. Additional work may be available in the summer based on business needs and seniority. Bay Laurel Catering staff may have alternate cyclic schedules. MINIMUM REQUIREMENTS

Possession of, or eligible to obtain a Washington State Food Worker Card within two weeks of employment.

One year of experience institutional or high-quality food preparation and serving, or one year as a Food Service Worker or equivalent. Equivalent education/experience will substitute for all minimum qualifications except when there are legal requirements, such as a license/certification/registration. DESIRED QUALIFICATIONS

Possession of a valid Washington State Driver’s License and ability to drive University vehicles, for occasional deliveries and/or transportation between units CONDITITONS OF EMPLOYMENT

A satisfactory outcome from the employment verification and reference check processes.

Maintenance of a valid Washington State Food Worker Card.
