Are you a culinary expert with a passion for creating exceptional dishes and leading a talented team? Chez Messy, a renowned dining establishment, is seeking an experienced Chef to join our kitchen. As a Chef, you will play a crucial role in ensuring proper service, maintaining high-quality standards, and providing exceptional dining experiences for our guests.
Position: Chef
Reports to: General Manager/Restaurant Manager
Responsibilities:
Present yourself in the proper uniform, equipped with all the necessary tools for success, including a calibrated thermometer, notepad, and pen for note-taking and observation.
Possess the skills and knowledge to perform all duties and responsibilities of various kitchen positions.
Conduct interviews, hire, evaluate, reward, and discipline kitchen employees as appropriate.
Orient and train kitchen employees in property and department rules, policies, and procedures.
Train kitchen employees in food production principles and practices, establishing quality standards for all menu items and food production processes.
Ensure that all kitchen employees are trained in the safe operation of equipment and utensils. Establish and maintain maintenance schedules for all equipment. Provide safety training in lifting, carrying, hazardous material control, first aid, and CPR.
Train kitchen employees in sanitation practices, establish cleaning schedules, stock rotation, refrigeration control points, and other sanitary controls.
Train kitchen employees in FIFO inventory procedures, ensuring that all products have a date of receipt or production.
Ensure that all prepared products are properly labeled with a description of the container contents.
Supervise multiple employees simultaneously, maintaining a hands-on approach.
Direct employees to ensure proper execution of food preparation.
Compute product usage to aid in product ordering.
Place proper food, beverage, and paper product orders.
Operate computers and perform all related functions efficiently.
Schedule kitchen employees based on business forecasts and predetermined budget. Maintain accurate payroll records for submission to the payroll department.
Complete all daily paperwork accurately and in a timely manner.
Maintain security, equipment, and sanitation standards.
Maintain standards through effective delegation.
Consistently exceed guest standards and expectations.
Effectively control labor, food, beverage, and paper costs by establishing purchasing specifications, storeroom requisition systems, product storage requirements, recipe adherence, and waste control procedures.
Ensure the safety of employees and guests by implementing good safety practices within the restaurant.
Conduct mock health inspections on a monthly basis, unless otherwise instructed by the General Manager or Owners.
Assist in maintaining proper emergency and security procedures.
Fill in for and support line employees as needed.
Hold a NYC Food Handlers Certificate.
Job Standards:
Possess basic English reading and communication skills.
Set an example for employees to follow.
Ability to maintain organization, sanitation, and operational standards.
Apply disciplinary action in accordance with Chez Messy guidelines and policies.
Consistently treat guests, employees, and management in a courteous and professional manner.
Education and Experience:
High School diploma or equivalency.
A minimum of five years as a Sous Chef, plus three years in another food preparation position.
Additional Job Functions:
Fulfill other duties assigned by the General Manager and/or Owner, contributing to the overall success of the kitchen operation.
