Gage & Tollner, the landmarked oyster and chop house in Downtown Brooklyn, originally opened in 1879, and re-opened under current ownership in 2021. Since then, it has become again the “very famous restaurant in Brooklyn,” a leader in New York City’s legendary culinary scene. Our new Service Director will be an important member of our compassionate, intelligent, and hard-working team, and will be critical to the success of our business.

Warm, professional service has been the hallmark of Gage & Tollner for 140 years. Historically, the restaurant was known for the longevity of its waitstaff, their years of service marked by the gold insignia they wore on their uniform jackets. Long after guests forgot exactly what they had to eat, they would remember the dignified but friendly hospitality of our servers.

The bar manager will continue this tradition by supervising every aspect of floor service at Gage & Tollner. They will recruit and hire all front-of-house bar staff, and implement comprehensive training programs to ensure our staff know how to do their jobs well, and why doing that work well matters. They will be a regular presence on the floor at Gage & Tollner, will offer our staff one-on-one coaching as needed, and will create opportunities for novice employees to learn and progress. Working with the general manager, they will create innovative ways to recruit and retain a diverse and dedicated workforce. The role requires endurance and empathy. This is a full time position with open availability for scheduled shifts. As a member of the management team you will be an additional ambassador to the restaurant. Use best judgment to do what is right and fair, courageously provide honest feedback to colleagues to hold them accountable to our standards of excellence, and actively build trust with colleagues and stakeholders. Daily sideworks that will include opening and closing the business will be expected. Food Handler Certificate and TIPS certified is a requisite.

Bar Team Management

The Bar Manager is the captain of the bar team and their “go-to” manager. It’s the Bar Manager’s responsibility to ensure that the bar team is a high-functioning, cohesive unit producing best-in-class cocktails.

Bar Production Management

Gage & Tollner has a current weekly liquor revenue exceeding $45K. This volume of sales requires extensive ‘prep work’ to be done during off-hours. The Bar Manager oversees this process.

Bar Service and Inventory Management

It is the bar manager’s responsibility to establish Gage & Tollner bars as a great place to dine, and to make sure drinks are being made as quickly and accurately as possible during service.

Bar Team Training

The bar manager will strive to create comprehensive training programs for positions behind the bar and positions in support of the bar. These programs will be documented and clearly defined, including opportunities for trainee and trainer feedback, and trainee accountability for the information they have received. In creating these programs, the bar manager will use the hands-on experience of Head Bartenders and other FOH management team members.
