Assistant Butcher - Butcher Shop

The Assistant Butcher is responsible for the daily production of meats, poultry, fish, patties and sausages in the butcher shop.Job Responsibilities: Responsible for cutting, curing, slicing, yielding, and weighing of all butcher shop products for the hotel and the proper labeling and storing of products.  The Assistant Butcher is also responsible for portion and quality control. Conducts product inventories. Guides and trains trainees. Responsible for maintaining the cleanliness and sanitation of work areas and equipment in accordance with Health Department standards.
