Position: Executive ChefLocation: The Snow Lodge at the St. Regis Hotel, Aspen, COSeasonal: Winter 2024-2025 (Potential for Full-Time/Year-Round)Compensation: Generous package including housing for the winter seasonStart Date: ImmediateAbout Us:The Snow Lodge, located within the St. Regis Hotel in Aspen, Colorado, is a destination forboth casual fine dining and vibrant après-ski nightlife experiences. Our sister property, TheSurf Lodge, is a renowned venue in Montauk, NY. We are currently seeking an ExecutiveChef for the winter season, with the potential for full-time, year-round employment,overseeing kitchen operations at both properties.Role Overview:This is an exciting, high-demand role that will challenge and reward the right candidate. Youwill be responsible for delivering elevated New American cuisine with strong Italianinfluences, including handmade pastas. In addition to overseeing service in our mainrestaurant, you will also lead culinary efforts for our après-ski parties in the St. RegisCourtyard and in The Jade Room, our nightlife space. The ideal candidate will have a strongbackground in preparing a wide range of cuisines, managing back-of-house (BOH)operations, and always ensuring Department of Health (DOH) compliance. We are lookingfor someone who is extremely organized, and capable of running efficient kitchenoperations in a fast-paced environment.Key Responsibilities: Lead and manage all culinary operations for The Snow Lodge restaurant, après-ski events, and The Jade Room nightlife space. Develop and execute a New American menu with Italian influences, while being comfortable with a wide array of cuisines. Oversee BOH financial management, including inventory and food cost control, scheduling, payroll, and profit and loss (PNL) generation. Ensure the highest standards of food quality, presentation, and consistency. Ensure strict adherence to all Department of Health regulations, including sanitation, food safety, and proper storage practices. Maintain an organized kitchen, ensuring smooth and efficient operations. Collaborate with the front-of-house (FOH) team to ensure seamless service.Qualifications: Proven experience as an Executive Chef or Head Chef in a fast-paced, high-volume environment. Experience running a seasonal operation preferred. Strong understanding of BOH financials and operational procedures. Expertise in preparing a variety of cuisines, with an emphasis on New American and Italian. Excellent knowledge of DOH requirements. Exceptional organizational skills, with the ability to manage multiple tasks and maintain a structured kitchen. Strong leadership and communication skills. Ability to thrive in a dynamic, high-energy atmosphere. What We Offer: Competitive compensation package. Housing provided for the winter season.
