Join Our Team as a Sushi Chef at Hi.Dozo!
Are you a skilled individual with a passion for sushi preparation? We are seeking someone like you to join our team as a Sushi Chef. In this role, you will be responsible for setting up and stocking the station for service, as well as preparing all sushi items in coordination with the rest of the kitchen staff.
Responsibilities
Possess a full grasp of menu and food standards, including garnish and sauce set.
Able to make real time adjustments to meals to accommodate guest requests while following guidelines of the established menu set by Executive Chef and Chef Nakazawa
Maintain an understanding of dietary restrictions, allergies, sensitivities and possess an ability to adjust within the set guidelines
Regularly take inventory of fish, and shellfish, including all potential seasonal adjustments in menu
Possesses a thorough understanding of cutting, slicing, and fileting, as well as techniques such as inclusion pickling, curing, smoking, and scoring
Control and limit waste by maximizing yields of products such as fish, rice, sauces, etc
Clearly communicate menu and product adjustments to all members of the culinary team
Ensure that all food products have been prepared correctly and are to Company recipes and standards
Complete shift work (prep, opening and closing checklists), as assigned, timely and thoroughly in accordance with department standards
Manage culinary station, from start to finish
Prepare sushi items in cooperation with the rest of the kitchen staff for consumption by the customer
Complete shift work (prep, opening and closing checklists), as assigned, timely and thoroughly in accordance with department standards
Clean equipment, as assigned, thoroughly and in a timely fashion
Manage proper storing temperatures and rotation procedures according to DOH regulations
Maintains sanitation to Department of Health standards; Keep work area clean and organized
Informs Manager on Duty and/or Executive Chef immediately of any DOH or OSHA/workplace safety violations
Maintain complete knowledge of correct maintenance and use of equipment; use equipment and tools only as intended, properly and safely
Inform Manager on Duty and/or Executive Chef of any product, materials or equipment needs
Completes other duties as assigned by the Chef and management team
Essential Functions
Polished personal presentation; grooming meets Company standards, as outlined by Employee Handbook.
Communicates information effectively and efficiently.
Able to work nights, weekends and holidays, and variable schedule, per the needs of the business.
Ability to perform essential job functions under pressure, maintain professionalism when working under stress.
Maintains general knowledge of Company restaurant and bar concepts, location, transportation, management team, etc.
Participate in community events and ensure corporate social responsibility goals of the Company are met.
