Using innovative, ecologically sustainable practices, we manage four hundred acres of healthy pasture land, forests and diversified produce gardens. Position Overview

Title: Line Cook

Location: Philo Ridge Farm in Charlotte, Vermont

Philo Ridge Farm is looking for a professional and engaging Line Cook with excellent culinary skills to support our Hospitality program. The Line Cook will work with the kitchen team, led by the Chef de Cuisine, to ensure a high level of quality and standards for all prepared food. The Line Cook will execute the proper product rotation of raw ingredients and cooked items. The Line Cook is responsible for accurate, efficient, and timely execution and plating of menu items while setting an example for quality, quickness and attention to detail for other team members. They will also be an active contributor to the open and constant line of communication with all other team members regarding product, production timeline for prepared food items, and ingredients.

Responsibilities

· Efficiently, timely, and accurately cook and plate all menu items according to PRF standards

· Accurately follow recipes, portion control, and work to minimize food waste

· Set up and break down stations in a timely and efficient manner

· Stock and maintain appropriate levels of food on the line during service

· Execute proper food handling and all physical safety techniques

· Properly use and perform regular maintenance on all kitchen and restaurant equipment

· Assist in special events, staff meals and other events as needed

· Support the execution of additional tasks and responsibilities may be assigned as needed

· Contribute to all channels of daily communication within the department, including verbal check-ins with coworkers and supervisors, and written content for prep lists and journals

Qualifications

· 2-year minimum experience as a Line Cook in a professional kitchen

· Demonstrated passion for food with a solid foundation of cooking knowledge

· Demonstrated commitment to creating excellent product and providing seamless service

· Demonstrated professionalism and poise when interacting with guests and co-workers

· Demonstrated commitment to attendance and punctuality

· Multitasker who can remain calm in a fast-paced and dynamic environment

· Team player and self-starter who is able to be coached and also work independently

· Ability to work weekdays, weekends, nights and mornings (as needed)

· Ability to follow procedures and instruction

· Physical and environmental requirements include continuous standing and occasionally carrying heavy loads, occasional environmental exposure to cold, heat and water.

· Preferred experience in the handling and routine maintenance of various types of cooking equipment including dollies, ovens, fryers, stoves, meat grinders, meat slicers and knives

· Prefer knowledge of food safety and health state regulations

Compensation

Compensation is based on verified experience.
