Responsible for the quality execution of food service through adherence to recipes, perpetual inventories and line check sheets. Responsible for the cleanliness and maintenance of kitchen and all equipment. Responsible for supervision, training and development of kitchen line and prep cooks and dishwashers.Maintain a food cost of 28-30% by participating in weekly inventory and ordering, and maintaining daily control of food usage.
Follow all culinary production guidelines, including daily line checks and perpetual inventory sheets, to maintain freshness and keep spoilage and loss at a minimum.
Create daily specials, along with Café Manager and/or Executive Chef.
Responsible for sanitation and safety in kitchen.
Work with Café Manager to ensure that kitchen policies and procedures are adhered to.
Work a flexible schedule, as determined by the business needs of the café.
