At The Salty, our pastry prep cooks are responsible for monitoring and preparing all our glazes, filling, and toppings needed for production. They work directly with the Executive Pastry Chef and Pastry Sous to uphold our quality standards. Pastry prep cooks set our team up for success every day by preparing these items with proper safety equipment, tools, and recipe specifications.

WHAT WE'RE LOOKING FOR

At least 1-year experience as a prep cook, pastry cook, or similar role

Thorough understanding of basic pastry techniques such as mixing methods, making pastry cream, cooking curd

Excellent understanding of various cooking & baking methods, ingredients, equipment and procedures

An extreme attention to detail

Ability to multitask and set priorities

Friendly attitude & team player

Courage to move fast, think big, and take risks to shape a winning outcome

Curiosity to continue to learn

Flexibility to work a variety of shifts including weekends, and holidays

Integrity to work alone with minimal supervision

Initiative to communicate and suggest improvements when needed

Ability to remain calm and focused in a fast-paced environment

Ability to work in a standing position for long periods of time (up to 10 hours)

Ability to bend, reach, stoop, and lift up to 50 pounds

Fluency to read and communicate in English

WHAT YOU'LL DO

Prepare glazes, fillings, toppings and other products per company standards and recipes given by the Executive Pastry Chef

Calculate and scale recipes to determine the quantities of prep items needed based on given production totals

Communicate with kitchen leads and lead baristas to cross check quality and production numbers

Ensure cleanliness of work areas including but not limited to tables, shelves, microwaves, mixers, and floors

Ensure maintenance of equipment and tools used daily and report any malfunctions to the Executive Pastry Chef immediately

Ensure the Executive Pastry Chef is alerted of inconsistencies

Assist product quality and freshness goals by FIFO’ing refrigerators, glazes, toppings, and dry goods throughout the week

Assist with inventory management by performing an opening or closing inventory as needed and submitting to the Executive Pastry chef

Receive deliveries from purveyors and vendors, cross reference items received with order invoices, and inspect items for quality

Other related responsibilities as assigned
